Recipe Ingredients for Greek meat and rice lettuce rolls with avgolemono sauce

1/3 lb beef
1/3 lb pork
1/2 cup white rice
1/2 medium onion
1 small carrot
2/3 cup water
1 tsp cinnamon
1/2 tsp. cloves
2 T. mint
1/2 cup pine nuts
1/2 cup currants
1 cup chicken stock
3 T lemon juice
2 eggs
1 tsp corn starch
1 T. butter
9 leaves of romain lettuce

Recipe Directions for Greek meat and rice lettuce rolls with avgolemono sauce

  1. Filling

  2. sautee onion and carrot in a non-stick pan or with a bit of olive oil. When wilted but not browned add meat cook until pink- 5 - 8 min.

  3. Add white rice and sautee, then add water and bring to a boil, cover, turn to low and cook until rice is al dente. (Cooked white rice can also be used and this step omitted)

  4. Add herbs and spices, nuts and currants, salt and pepper. Remove from heat.

  5. Sauce

  6. Heat chicken stock in the top of a double boiler.

  7. Whisk together corn starch and lemon juice. Add in eggs and whisk. Add chicken stock to egg lemon juice mixture 1/4 cup at a time. Whisk until all is added then pour mixture back into the top of a double boiler and cook until sauce is think, like yogurt.

  8. Lettuce leaves

  9. Plunge lettuce leaves in boiling water for 1 - 2 minutes until wilted.

  10. Fill with 2 T. of filling- wrap lettuce around filling like a burrito.

  11. Place lettuce rolls around remaining filling on a platter and pour sauce over all.
