Recipe Ingredients for Greek Lentils with Tomatoes

1 cup Lentils, Mature Seeds
1 medium (2-1/2" dia) Onions
4 tbsp Extra Virgin Olive Oil
1/2 cup, chopped Peppers, Sweet, Green
16 oz Tomatoes Crushed In Puree
1/4 tsp Seasoned Salt

Recipe Directions for Greek Lentils with Tomatoes

  1. Place lentils in pot with 8 cups of water and bring to boil for 30 minutes.

  2. Meanwhile, chop onions and peppers.

  3. Heat oil in large skillet.

  4. Add onions and peppers, sauteing.

  5. Drain lentiles and add to peppers.

  6. Add 1 cup water, tomatoes, and salt.

  7. Cook for 30 mins.

  8. Serve over rice, quinoa, etc.
