Recipe Ingredients for Greek Lentil Stew

1 cup chopped onion
1 cup chopped green bell pepper
2 teaspoons minced garlic
2 cups diced potato, peeled
1 cup lentils
14 1/2 ounces diced tomatoes, canned
3 cup vegetable broth
1 teaspoon dried oregano
1 teaspoon dried mint
1/2 teaspoon turmeric
1/2 teaspoon ground coriander (cup)
2 cup Zucchini Squash sliced
3 cup cauliflower
1/2 pound Beans, Snap, Green
1 Salt and Pepper to taste

Recipe Directions for Greek Lentil Stew

  1. Spray large sauce pan with cooking spray; heat over medium heat until hot. Saute onion, bell pepper, garlic until tender, about 5 minutes. Add potatoes, cauliflower, lentil, tomatoes, stock and seasonings; heat to boiling. Reduce to simmer until lentils are tender about 25 minutes.

  2. Add zucchini and green beans; simmer, uncovered, until vegetables are tender and stew is thickened about 10 minutes. Salt and pepper to taste
