Recipe Ingredients for Greek Lentil Stew

1 tsp olive oil
1 cup chopped onion
1 cup chopped green bell pepper
2 tsp minced garlic
2 cups diced potatoes
1 cup lentils, washed and sorted
14 1/2 ounces diced tomatoes, no salt added
3 cups vegetable broth
1 tsp dried oregano leaves
1 tsp dried mint leaves
1/2 tsp dried turmeric
1/2 tsp dried coriander
1 medium zucchini, sliced
1/2 lb. green beans, trimmed
1 salt and pepper to taste

Recipe Directions for Greek Lentil Stew

  1. Lightly coat large pan with olive oil (or spray with cooking spray); heat over medium heat until hot.

  2. Saute onion, bell pepper, and garlic until tender, about 5 minutes. Add potatoes, lentils, tomatoes, broth, and seasonings; heat to boiling.

  3. Reduce heat and simmer, covered, until lentils are tender, about 25 minutes.

  4. Add zucchini and green beans; simmer, uncovered, until vegetables are tender and stew is thickened, about 10 minutes. Season to taste with salt and pepper.
