Recipe Ingredients for Greek Lentil Soup with Spinach

6 cloves garlic
150 g Carrots, chopped
75 g celery chopped
1 tablespoon olive oil
270 g onion, chopped
16 oz dry lentils, about 2 cups
14 1/2 oz canned tomatoes, diced
1 tsp oregano
1/2 tsp black pepper
1/2 tsp dried mint
10 oz frozen chopped spinach
40 g Onion Soup Mix (1 envelope)
11 c water

Recipe Directions for Greek Lentil Soup with Spinach

  1. In large pot, heat olive oil and saute garlic, celery, carrots and onion for about 5 minutes to soften

  2. Add the water and lentils

  3. Bring to a boil

  4. Simmer for about 45 minutes

  5. Add the rest of the ingredients

  6. Return to a simmer

  7. Simmer for an additional 20 minutes.
