Recipe Ingredients for Greek Lentil Soup

1 cup Onions
3 1tsp Olive Oil
1 cup, diced Celery
1 cup, chopped Carrots
2 pieces Garlic Cloves
2 tsp Oregano Leaves
0.5 tsp Salt, Table
0.5 tsp Pepper, Black
8 cup (8 fl oz) Water
1 cup Organics Green Lentils Dry

Recipe Directions for Greek Lentil Soup

  1. Heat oil in a large pot over medium heat. Add celery, carrots, onion, garlic, oregano, salt and pepper; cook 5 minutes.

  2. Rinse and drain lentils.

  3. Add 8 cups of water and the lentils to pot. Simmer, partially covered, 5 minutes.

  4. With a hand blender or potato masher, puree soup until semismooth and thick.

  5. Drizzle with lemon juice; serve with 1/2 a pita, cut into wedges and toasted.
