Recipe Ingredients for Greek Lentil Soup

2 cups uncooked lentils
8 cups water
1/2 onion
1 carrot
1 celery stalk
15 oz uncooked potato
2 tbsp olive oil
1 tbsp bay leaf
1/2 cup vinegar

Recipe Directions for Greek Lentil Soup

  1. Mix all ingredients, except the vinegar, in a soup pot and cook until the lentils are very soft, about one hour. Add vinegar at the end and serve.

  2. Makes about 8 cups.
