Makes 4 servings



We use homemade chicken stock and either the chicken from the stock or from a can. Both are equally good. You can use less, or more, lemon juice to suit your taste.

Recipe Ingredients for Greek Lemon-Rice Soup

3 1/2 cups chicken broth
1/4 cup long-grain rice
2 cloves garlic, minced
1/3 cup lemon juice
1 egg, lightly beaten
2 tbls finely chopped parsley
1/4 tsp salt
1/4 white pepper
13 oz chicken

Recipe Directions for Greek Lemon-Rice Soup

  1. Heat broth to boiling in medium saucepan; stir in rice and garlic. Reduce heat and simmer, covered, until rice is tender, about 25 minutes. Reduce heat to low.

  2. Mix lemon juice and egg; slowly stir mixture into soup. Stir in chicken. Stir in parsley; season to taste with salt and white pepper. Pour soup into bowls.
