From my Flat Belly Diet book. Yummy! Add a little feta cheese and this is a very filling dinner.

Recipe Ingredients for Greek Lemon Chicken & Vegetables

1/2 lb chicken breast, tenderloin
1 lb red potato, diced
1/2 red bell pepper
1/2 yellow bell pepper
20 kalamata olives, halved
1/2 purple onion, wedged
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice
1 tablespoon dried oregano, crushed
1 tsp paprika
1 tsp lemon zest
1/2 tsp black pepper

Recipe Directions for Greek Lemon Chicken & Vegetables

  1. Using two pieces of foil, line a roasting pan so that there is a divide in the middle (to keep chicken juices out of veggies) with the matte side up.

  2. Place chicken tenders on one side of divide

  3. Toss vegetables together and pour into other side of the divide.

  4. In a small bowl, mix the oil, lemon juice, zest, oregano, pepper and paprika. Brush over vegetables and chicken.

  5. Bake at 400 for about 30-40 minutes or until chicken is no longer pink, turning chicken and tossing vegetables about half-way through.
