Greek Lasagna Recipe

Unique twist to traditional Italian lasagna. Stole recipe from "Three Fat Chicks on a Diet" website - but haven't tried it yet!

Recipe Ingredients for Greek Lasagna

3/4 cups part-skim ricotta cheese
4 oz tofu, soft / drained
1 1/2 oz low-fat feta cheese, crumbled
15 oz frozen chopped spinach, thawed
1/4 c scallions, thinly sliced
1/2 tbsp dried dill weed
1/4 tsp salt
1/8 tsp nutmeg
1/8 tsp ground black pepper
85 g (approz 4 "sheets")lasagna pasta, cooked and drained
1 med tomato, thinly sliced

Recipe Directions for Greek Lasagna

  1. Combine ricotta, tofu, and feta until well blended - set aside.

  2. In large bowl, mix spinach, scallions, and seasonings.

  3. Stir inn cheese mixture - blend well.

  4. Spray baking pan with nonstick cook spray (this recipe is cut in HALF - original recipe calls for 9x13" pan, so I guess you could use an 8"8 pan instead??)

  5. Cover bottom of pan with noodles

  6. Top with half of filling.

  7. Repeat layering, ending with layer of noodles.

  8. Top with tomatoes,

  9. Cover pan and bake at 350 for 30minutes.

  10. Let stand 10 minutes before serving,

  11. Optional: Spoon a little warm tomato sauce on plave before serving to add moisture and extra flavor.
