Recipe Ingredients for Greek Lamb Salad

1 lb lamb
1/4 cup red wine vinegar
1/4 cup red wine
2 tbsn soy sauce
1 tbsn mint
1 tbsn onion
2 tspn rosemary
2 tspn olive oil
1/2 tspn salt
1/2 tspn black pepper
1 clove garlic
3/4 lb potato
3 cups romaine lettuce
1/2 cup chopped celery
1/2 cup cherry tomatoes
1/4 cup feta cheese

Recipe Directions for Greek Lamb Salad

  1. Trim fat from lamb, combine the next 10 items and stir well.

  2. Put 1/2 cup in a bag and add the lamb, allow to marinade for 8hrs turning bag hourly.

  3. put 1/4 cup aside for salad

  4. Steam the red potatoes (12 mins until soft) combine remaining ingredients in a bowl adding lamb, sprinkle with remaining marinade and toss. sprinkle with fresh ground pepper and serve.
