These Greek-inspired pitas are extremely satisfying flavor-wise and look absolutely amazing, but they still manage to stay well under the 500-calorie mark. The amounts for the fresh vegetables are deliberately low -- they assume you actually want to fit everything in your pita. Feel free to splurge on fresh, healthy vegetables like lettuce, onion, tomato, cucumber, and sprouts.

Recipe Ingredients for Greek Lamb Pitas

2 pitas
60 g canned black beans
90 g ground lamb
1/2 tbsp sweet paprika
2 tsp cumin seeds
1 g black pepper
1 tsp olive oil
150 g Fat Free Plain Yogurt
3 g fresh mint leaves
1 pinch fresh dill
2 sprigs fresh parsley
1 garlic powder, to taste
1/2 tsp lemon juice
50 g cucumber
20 g lettuce
20 g onion
30 g tomato
10 g Alfalfa Sprouts

Recipe Directions for Greek Lamb Pitas

  1. To make the protein: mash the beans well together with the ground lamb, paprika, and salt lightly. Press into 4 thin, flat patties. Pat the cumin seeds onto these lightly. Use only enough olive oil to keep the patties from sticking. When cooked through, remove from heat and set on a wire rack to allow excess grease to drain away.

  2. To make the sauce: Drain the yogurt in a coffee filter held over a bowl for an hour or until thickened to your liking. Chop the fresh mint, dill, and parsley. Mix this together with the yogurt, lemon juice, garlic powder, and grind in black pepper to taste. It's best to let this mixture rest in the fridge for 30-40 minutes before serving, but it will still taste good fresh.

  3. Put the protein, the fresh vegetables, and the sauce together on the pita and enjoy! Serving suggestion: add so many fresh vegetables that your pita falls apart, give up on the pita-as-sandwich idea, and eat with a fork.
