Recipe Ingredients for Greek grain salad with Feta

1 c quinoa
1 clove garlic
2 c spinach, tightly packed
1 T oregano, fresh
1 T lemon juice
1 t grated lemon peel
2 T olive oil
1 cucumber
1 tomato
1 green bell pepper
4 oz feta cheese

Recipe Directions for Greek grain salad with Feta

  1. cook quinoa according to directions

  2. In food processor, combine garlic and spinach.

  3. Add lemon juice, lemon rind, and oil.

  4. Stir into grain.

  5. Combine cucumber, tomato and bell pepper with grain mixture.

  6. Stir in 1/2 of the cheese

  7. Sprinkle with remaining cheese.
