Giant white beans baked with a veg. sauce

Recipe Ingredients for Greek Gigantes

4 cups sliced carrots
1 1/2 cups canned tomato
1 cup olive oil
1 lb uncooked dry white beans
2 diced green peppers
4 tbsp dried parsley
1/8 cup diced ginger root
3 cloves garlic
1 tbsp salt
1 diced hot pepper
1 tbsp dried oregano

Recipe Directions for Greek Gigantes

  1. soak beans overnight in cold water

  2. drain and cook beans in boiling water for about 45 min - until soft

  3. while the beans are cooking prepare the sauce

  4. combine in a baking dish and bake for about 1 hour, until all the liquids are absorbed
