Greek fish and veggie salad on pita bread

Recipe Ingredients for Greek Fish and Veggie Salad

2 green bell pepper, diced
2 red bell pepper, diced
2 red onion, diced
1 pint cherry tomatoes
1/4 cup pitted kalamata olives, roughly chopped
1 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon lemon juice, 1/2 lemon plus the zest
1 tablespoon dried oregano
1 tablespoon Old Bay
24 ounces tilapia, 4 filets
8 ounces yogurt, drained
1 clove garlic, finely chopped
1 teaspoon cumin
3 tablespoons dill relish
1/2 cup crumbled feta cheese
1/4 cup parsley leaves, chopped
8 ounces whole wheat pita bread, (4 pitas) warmed

Recipe Directions for Greek Fish and Veggie Salad

  1. Preheat oven to 400F.

  2. For the roasted veggie salad, toss together the peppers, red onion, tomatoes and olives on a large baking sheet. Drizzle with oil,salt and pepper. Roast in the oven until lightly brown and tender, about 15 minutes.

  3. While the vegetables are cooking, put a large skillet over medium-high heat with 1 tablespoon of oil. Season the fish with salt, pepper, lemon zest, oregano, and Old Bay. Cook the tilapia until golden brown on both sides and cooked through, about 2 minutes on each side.

  4. Once you have the fish working make the topping: In a small bowl, mix together the yogurt, grated garlic, cumin and dill relish, and reserve.

  5. In a large bowl. toss all the roasted vegetables together with the lemon juice. Top with crumbled feta and parsley. Serve tilapia topped with a little of the yogurt sauce and a wedge of lemon from the remaining half.

  6. Serve the fish with the salad and a piece of warm pita bread alongside.
