Recipe Ingredients for Greek Egg & Lemon Soup

3 cups chicken broth
3 tablespoons lemon juice
3 tablespoons shredded carrots
3 tablespoons chopped celery
3 tablespoons chopped onion
2 3/4 tablespoons chicken bouillon
1/8 teaspoon white pepper
1 1/2 tablespoons margarine
1 1/2 tablespoons flour
1/4 cup white rice
1/4 cup diced chicken
3 egg yolks

Recipe Directions for Greek Egg & Lemon Soup

  1. Combine chicken broth, lemon juice, carrots, onions, celery, bouillon and white pepper. Bring to boil and simmer for 20 minutes

  2. Blend the margarine and flour and gradually fold into the simmering soup. Simmer for another 10 minutes, stirring frequently

  3. Beat the egg yolks until very light, Gradually add some of the hot soup to the beaten yolks, stirring constantly. Fold the egg mixture into the soup pot and heat through. Add rice and chicken.

  4. Serve with a garnish of sliced lemon.
