Recipe Ingredients for Greek Egg-Lemon Soup with Pita Toasts

18 oz chicken broth
1/3 cup orzo or quick-cooking brown rice, uncooked
2 pita, rounds
1 tbsp margarine
1 tbsp extra-virgin olive oil
1/2 tsp bottled minced garlic
1/2 tsp dried oregano
2 large eggs
2 tbsp lemon juice, fresh
1 tbsp parsley, chopped (optional)

Recipe Directions for Greek Egg-Lemon Soup with Pita Toasts

  1. Heat oven to 375 degrees. Combine broth and orzo in a medium saucepan. Cover and bring to boil over high heat. Reduce heat to lo, cover, and simmer for 10-12 minutes or until orzo is tender

  2. While orzo is cooking, cut pita rounds into 6 wedges each. Open each wedge and break into 2 triangles. Place rough-side up on large baking sheet. Place margarine in small microwave-safe cup or bowl and microwave in high for about 1 minute or until melted. Stir in oil, garlic and oregano into margarine and brush evenly over pita triangles. Bake for 9-10 minutes or until crisp and golden brown

  3. While pita is baking, beat eggs in small bowl. Beat in lemon juice. After soup has simmered and orzo is tender, stir in 1 cup soup slowly into egg mixture, mixing constantly. Remove soup from heat. Pour egg mixture slowly into soup while stirring constantly. Sprinkle with parsley and serve with pita toasts.

  4. Serving Suggestions: Serve with a tossed salad of romaine lettuce, sliced cucumbers, Greek olives, and red wine vinaigrette dressing
