Recipe Ingredients for Greek Dip

2 eggplants
1 1/2 cups chick peas, cooked
8 oz (1 cup) nonfat Greek yogurt
4 tbs olive oil
2 tablespoons lemon juice
1/4 cup fresh mint

Recipe Directions for Greek Dip

  1. roast peeled eggplants with salt and half of oil

  2. let cool then add beans and feta

  3. mix yogurt, lemon, oil and mint

  4. toss together and you can process in food processor for a smoother dip
