Makes 4 servings



chicken breast marinated in greek style dressing( cal info unavailable for greek, so I substituted italian). Oven roasted potatoes tossed with lemon juice and greek spices, with romaine salad and greek dressing.

Recipe Ingredients for greek dinner

1 lb chicken breast
1/4 cup italian dressing
2 lb potatoes
1 tablespoon italian dressing
1 tablespoon lemon juice
4 cups romaine lettuce

Recipe Directions for greek dinner

  1. Marinate chicken overnight.

  2. Clean and quarter potatoes. Spray with Pam, toss with lemon juice, salt to taste and greek spices.

  3. Place in corningware dish, cover and bake at 400 degrees for 40 minutes or until tender.

  4. spray pan with Pam, and cook 5 minutes on each side. Cover with tin foil. Let rest 5 minutes on chopping board. Slice.

  5. Plate chicken on top of Romaine salad.
