Recipe Ingredients for Greek Chicken and Veggies

1/2 pounds chicken breast
1 tablespoon olive oil
1 red bell pepper
1 red onion
1/4 cup feta cheese
2 tablespoons flour
1 tablespoon dried oregano
1 tablespoon thyme
1/4 teaspoon salt
1/2 teaspoon black pepper
1/3 cup low sodium chicken broth
2 cup raw mushrooms
1 garlic clove

Recipe Directions for Greek Chicken and Veggies

  1. Combine flour, thyme, oregano, salt, adn pepper.

  2. add 1 tablespoon olive oil to non stick pan and heat to medium high heat.

  3. coat chicken breast with flour mixture and cook 3-5 minutes on each side. Remove from pan

  4. Spray same pan with cooking spray and add veggies/garlic.

  5. Stir fry for 2-3 minutes until starting to brown.

  6. Deglayze pan with chicken stock and 1 teaspoon of white vinegar

  7. allwo to simmer for 3 imnutes.

  8. Place veggies into a bowl and stir in half the feta cheese.

  9. add chicken to the sauce in the pan in the mean time and cover. Cook for 3 minutes.

  10. add veggie mixture to pan. Stir together to coat.

  11. Plate and crumble the remianing feta over chicken and veggies.

  12. A nice touch is to squeez a bit of fresh lemon on top and serve over isreali couscous.
