Recipe Ingredients for Greek chicken scampi

14 ounces pasta (110484)
1 pound chicken breasts (5064)
2 tbsp olive oil
10 olives
3 cloves garlic
1/2 cup parsley
1/2 cup lemon juice
1 cup feta cheese
1/2 cup white wine
1 tsp red pepper flakes
1 tsp lemon zest
1 tsp oregano

Recipe Directions for Greek chicken scampi

  1. Boil a pot of water for pasta and start it cooking.

  2. Thinly slice garlic, and saute until crisp in olive oil. Remove from pan.

  3. Fry chicken (cut in bite sized cubes) for 5-7 minutes.

  4. Add red pepper flakes, lemon zest, oregano, olives and wine, cook for a few minutes more.

  5. Add a ladle of pasta water and lemon juice, remove from heat.

  6. Drain pasta, add to skillet, mix well, add parsley and feta cheese.

  7. Top with garlic chips and optional grated parmesan.
