Oh so delicious - barbecued. The meat stays very moist and juicy even without the skin. We also used skinless thighs and they were wonderful!

Recipe Ingredients for Greek Chicken

36 oz chicken breasts, boneless, skinless
8 oz crumbled feta cheese
2 oz sun-dried tomatoes
5 oz chopped Kalamata olives
2 T oregano
2 T garlic, chopped
1 Black pepper
1 Salt to taste
2 T dried parsley

Recipe Directions for Greek Chicken

  1. Mix seasonings and rub onto chicken breasts.

  2. Let stand for 10 minutes.

  3. Rough chop Kalamata olives and sun-dried tomatoes. Combine with feta cheese and toss.

  4. Place chicken on preheated grill. Cook on one side 5-8 minutes and then turn. Place the olive-cheese-tomato mixture on top of each piece and continue grilling another 5-8 minutes until cooked through and juices run clear.

  5. Or you can put the mixture on the top of the chicken after it is done.
