Chicken stuffed with cheese and spinach, simmered with spinach and tomatoes

Recipe Ingredients for Greek Chicken

2 tbsp flour
1/2 tsp salt
1/4 tsp pepper
2 oz fat free feta cheese
1 tbsp lemon juice
1 tsp oregano
6 oz frozen spinach
1 tsp red pepper flakes
17.44 oz chicken breasts
1 1/2 small whole tomato
1 fl oz vegetable bouillon cube

Recipe Directions for Greek Chicken

  1. Combine cheese, lemon juice, oregano, red pepper flakes, and a little of the spinach.

  2. Create pockets in chicken breasts and stuff with mixture.

  3. Mix flour, salt, and pepper. Coat chicken breasts.

  4. Pan fry for 1-2 minutes on each side.

  5. Whisk together 1 cup vegetable or chicken broth with remaining flour mixture. Pour over chicken.

  6. Add remaining spinach and diced tomatoes. Bring to a boil, then simmer for 10 minutes.
