Recipe Ingredients for Greek Chicken Pita Folds

2 medium onion, sliced
2 clove garlic, minced
2 lb. boneless, skinless chicken breast
1/2 cup lemon juice
1/2 tsp black pepper
2 teaspoon dried oregano
1/2 teaspoon ground allspice
12 oz chobani 0% plain
1 tsp balsamic vinegar
1 tsp olive oil
1 granulated garlic, pepper, dill and red pepper flakes to taste
8 Pita Pocket Bread
4 tomato, sliced
4 cucumber, sliced
2 medium orange bell pepper, sliced in thin strips

Recipe Directions for Greek Chicken Pita Folds

  1. 1.In slow-cooker, combine onion, garlic, chicken, lemon juice, black pepper, oregano, and allspice; mix well. Cover and cook on LOW for 4?6 hours.

  2. 2. To make tzatziki: Dice 1/8 of one cucumber into very small pieces for tzatziki. (about 3-4 Tablespoons of chopped cucumber). Combine diced cucumber, yogurt, balsamic vinegar, olive oil and seasonings. Set aside. (Best refrigerated for a few hours or overnight)

  3. 3. One hour before slow cooker is done, remove chicken and place on cutting board. Using two forks, shred chicken. Place chicken back into onion mixture and cook for remaining hour.

  4. 3. When ready to serve, heat pita bread as directed on package. Spoon chicken and onion mixture onto warm pita bread. top with tomato, cucumber, pepper strips and tzatziki.
