Greek Chicken with Feta for the slow cooker

Recipe Ingredients for Greek Chicken with Feta

6 ounce feta cheese
2 tablespoon olive oil
4 cups Chicken Thighs
2 medium yellow onions
1 Salt and freshly ground black or white pepper to taste
15 ounce diced tomatoes
2 tablespoon tomato paste
1 pinch of Greek oregano

Recipe Directions for Greek Chicken with Feta

  1. Heat the olive oil in a medium size skillet and brown the chicken on both sides. While the chicken is browning, spray the inside of the crock with nonstick cooking spray and lay thinly sliced onion and garlic in the bottom. Place the browned chicken on top, sprinkle with salt and pepper, and add the tomatoes in juice (undrained), tomato paste, and oregano. Cover and cook on LOW for 6 to 8 hours, until the chicken is tender and cooked through.

  2. Arrange feta over the top of the chicken. Cover and cook for 15 minutes to melt the cheese. Serve immediately.
