A delicious fresh salad--recipe from Cooking Light

Recipe Ingredients for Greek Chicken and Barley Salad

12 oz skinless, boneless chicken breast
1/8 teaspoon salt
1 teaspoon olive oil
4 cups chicken broth
1 cup uncooked barley
2 cups cucumber
1 cup grape tomatoes, halved
1/2 cup yellow bell pepper
0.33 cup reduced-fat feta cheese
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon fresh basil
1 teaspoon fresh thyme
1 teaspoon red wine vinegar
1/2 teaspoon salt
3 garlic cloves, minced

Recipe Directions for Greek Chicken and Barley Salad

Cook (in 1 cup broth) and shred chicken. Cook Barley in 3 cups broth for 35 min. Cool, then mix in large bowl. Add other ingredients. Mix dressing ingredients (starting with e.v.o.o.) in a separate bowl first, then add to salad. Chill and serve.
