Recipe Ingredients for Greek Bulgur-Chicken Salad

12 oz Chicken
1.5 cup Bulgur, Dry
1.5 cup (8 fl oz) Water
6 tbsp Lemon Juice, Canned Or Bottled
1/4 cup leaves, whole Basil, Fresh
1 cup chopped Red Onion
1 cup Parsley
1.25 cup, pared, chopped Cucumber, Peeled
1 cup, chopped or sliced Tomatoes, Red, Ripe
2 oz Feta Cheese
10 olives Krinos Pitted Kalamata Olives
2 tbsp Extra Virgin Olive Oil
0.25 tsp Pepper, Black

Recipe Directions for Greek Bulgur-Chicken Salad

Bring the bulgar, water and 2 tablespoons lemon juice to a boil in a large sauce pan. Reduce heat to medium and simmer covered for 5 minutes. Set aside and allow to absorb the water. Meanwhile, poach the chicken in boiling water for 15-20 minutes. Chop all vegetables and herbs. Chop chicken. Combine all ingredients and allow to sit for 30 minutes.
