Recipe Ingredients for Greek Baked Vegetables

24 oz Eggplant
36 oz Zucchini
21 oz Onions
33 oz Potatoes
44 oz yellow Squash
12 oz Bell Pepper
32 oz Okra
1 tablespoon granulated Garlic
4 oz Parsley
2 tablespoon Dried Mint
1/2 cup Olive Oil
45 oz canned tomatoes
1 tablespoon Salt (or to taste)
1 tablespoon Pepper

Recipe Directions for Greek Baked Vegetables

  1. Peel & cut Eggplant into 2" cubes.

  2. Soak in water while preparing other vegetables.

  3. Soak the frozen okra in white vinegar. Drain before adding to other vegetables.

  4. Mix all vegetables in very large baking pan or 18 quart roaster. Cover with foil.

  5. Bake at 375 degrees for 2 hours or until potatoes are tender.

  6. ? Stir every 20-30 minutes. Add water as needed. If too much water, uncover the last 30 minutes of baking.
