Recipe Ingredients for Greek Baked Ritagoni (Vegan)

2 lbs tofu
1/2 cup cashews
1 tsp garlic powder
1 tsp basil
1 1/2 cups olives (sliced in half)
13 oz pasta (ritatoni wholewheat)
1 1/2 cup diced tomato (Hunts Fireroasted)
3 cups frozen spinach
1 cup sliced peppers
1/4 cup cornstarch
1/8 cup garlic (chopped)
2 tsp salt
1 tsp pepper

Recipe Directions for Greek Baked Ritagoni (Vegan)

  1. Preheat oven 350

  2. pulverize cashews

  3. press excess liquid from tofu and then blend until smooth.

  4. mix the tofu and cashews with dry spices and cornstarch - reserving 1 tsp of salt

  5. Cook the pasta

  6. Grease a lasagna pan

  7. Mix cooked pasta with vegetables, chopped garlic and salt and then add in the tofu mixture.

  8. Spread in lasagna pan

  9. cook for 30-40 minutes
