Grecian Summer Salad Recipe

Makes 4 servings



This is great made ahead, but still tasty if served immediately. Use vine ripened tomatoes. Feel free to add extra herbs -- I often add parsley as well. If there are leftovers, it tastes great the next day.

Recipe Ingredients for Grecian Summer Salad


Combine:
2 c. tomatoes (preferably beefsteak), diced
1 cucumber, diced

Whisk together:
1/8 c. olive oil
1/2 T. lemon juice
1 T. red wine vinegar
1/2 tsp. minced garlic (or more to taste)
2 T. fresh chopped oregano
1 T. fresh chopped basil
1/2 tsp. Salt

Pour dressing over vegetables & marinate for up to 4 hours. Top with:
1/2 c. crumbled feta cheese
