Recipe Ingredients for Grecian Spaghetti Saute

1/2 lb pasta
2 tsp olive oil
3 scallion(s), sliced
2 clove garlic, minced
14 oz canned diced tomatoes, undrained
1 cup canned chickpeas, drained
1 tsp dried oregano
1/4 tsp table salt
1/4 tsp black pepper
1/8 cup dill or mint, use 1/4 cup if fresh
1/4 cup feta, crumbled

Recipe Directions for Grecian Spaghetti Saute

  1. Heat oil in a large nonstick skillet.

  2. Add scallions and garlic and cook, stirring, until fragrant, about 1 minute.

  3. Add diced tomatoes, chickpeas, oregano, salt and pepper; bring to a boil.

  4. Remove from heat and stir in dill or mint.

  5. Top each serving with feta cheese.
