Recipe Ingredients for Great Roasted Carrots (CI)

1 1/2 lbs carrots, peeled, halved crosswise, cut lengthwise to even size
2 tbsp unsalted butter, melted
1/2 tsp salt
1/4 tsp pepper

Recipe Directions for Great Roasted Carrots (CI)

  1. Adjust oven rack to middle position, heat to 425

  2. In large bowl combine carrots, butter, salt and pepper. Toss to coat.

  3. Transfer to parchment lined baking sheet, spread in single layer.

  4. Cover baking sheet with foil, cook 15 minutes.

  5. Remove foil and continue to cook until browned, 30 to 35 minutes. Stir twice.

  6. Transfer to serving platter.
