Fabulous cake like cookies. Makes a ton of small ones or make them 1/4c in size for 32 large cookies.

Recipe Ingredients for Great Pumpkin Cookies

4 cups white flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
16 oz pumpkin
1 cup butter
1/2 cup unsweetened applesauce
2 cups brown sugar
1 egg
1 tsp water
1 cup chocolate chips

Recipe Directions for Great Pumpkin Cookies

  1. In One Bowl combine flour, oats, soda, cinnamon and salt.

  2. In a second larger bowl cream butter and applesauce, gradually add in sugars. Beat until light and fluffy. Add egg and water.

  3. Alternate mixing in the dry ingredients and the pumpkin until both mixtures are combined.

  4. Stir in chocolate chips.

  5. Drop dough onto a lightly greased cookie sheet. (It will not spread or flatten).

  6. Bake at 350 degrees for 20-25 minutes until cookies are firm and lightly browned.

  7. Remove from sheet, cool on racks.

  8. NOTE: Dough can be frozen in an air-tight container. Thaw in refrigerator; bake as directed.
