Recipe Ingredients for Great northern beans - large batch for soup

25.2 serving Organic great northern beans dry
2 tbsp chopped Onions
30 grams Carrots
2 tbsp Celery
1 tsp Garlic
1.5 1tsp Olive Oil

Recipe Directions for Great northern beans - large batch for soup

Quick soak beans. (rinse, put in pot with 3" water over top, bring to almost boil, remove from heat, cover and let sit for 1 - 2 hours. rinse again before using.) Heat olive oil in same pan till it shimmers. add veggies and saute lightly till they are soft. Add beans and cover to about 1 inch over top. bring to boil and cover - simmer on low for about an hour. Ready for use in soups. (the bean brine is also very good to keep for the soup.)
