Use this as a basic guidline for a low calorie fat free muffin that rises nicely and is minimally, but satisfactorily sweet. Use whatever fruits you want, sub in other pureed fruit/ mashed banana/ baby food you want for the applesause. If you use banana or applesauce that is sweetened, you can even leave out the sugar.

Recipe Ingredients for Great Low-Cal FF Muffins

1 1/2 cups wheat bran
1/3 cup skim milk
2/3 cup water
1/2 cup applesauce
2 egg whites
1/5 cup brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries

Recipe Directions for Great Low-Cal FF Muffins

  1. Preheat oven to 375 degrees F (190 degrees C).

  2. Grease muffin cups or use paper muffin liners.

  3. Mix together wheat bran and milk, and let stand for 10 minutes.

  4. In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.

  5. Beat in bran mixture.

  6. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.

  7. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.

  8. Divide evenly amongst muffin cups.

  9. Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

  10. *I got 11 ok sized muffins out of this. If you are ok with smaller muffins, you could get 12, or if you want to make jumbos then just divide batter evenly among however many jumbo muffin cups you want (depending on size as to how many you will get - the nutrition analysis is for 11 though). Baking time may also vary for different sized muffins, just keep a good eye on them!
