Recipe Ingredients for Gravlax

1 1/2 lbs raw salmon
3 tablespoons salt
3 tablespoons sugar
3 teaspoons pepper
1 cup fresh dill

Recipe Directions for Gravlax

  1. Remove any bones from the salmon. Place salmon on a large piece of plastic wrap (about three to four times the length of the fillet) with the skin side down.

  2. Put the salt, sugar, and pepper into a bowl and mix until evenly distributed. Spoon the mixture onto the exposed salmon flesh, making sure to cover as much of the exposed areas as possible.

  3. Place the dill on top of the salmon. If the dill is too long to fit on top of the fillet, snap off stems or fold the dill over. Do not chop the dill. The more dill, the better; pile it quite high.

  4. Wrap the salmon, salt, and dill up tightly in the plastic wrap. Take a second sheet of plastic wrap and wrap again. Place the package in a baking dish or container to catch any juices that escape during curing.

  5. Refrigerate for at least two days. Continued refrigeration in the package will intensify flavors. When ready, remove from the refrigerator, open the package, remove the dill, and rinse in water, removing any pieces of salt or pepper stuck to the flesh. Dry with a paper towel.

  6. Slice thinly on the bias, starting at the tail end. Each slice should be detached from the skin.
