Very fast easy meal. Serve with a tossed salad and crusty bread.

Recipe Ingredients for Gratined tomato omlette with cheese (and cream)

4 eggs
4 tbsp shredded low fat cheddar
4 tbsp ricotta or fat free cream
2 tomatoes
2 tbsp chopped parsley
2 tsp light margarine
1 pinch turmeric
1 salt and pepper
2 tbsp water

Recipe Directions for Gratined tomato omlette with cheese (and cream)

  1. Chop or puree the tomatoes finely.

  2. Chop the parsley finely.

  3. Break the eggs into a bowl. Add turmeric, salt and pepper and parsley. Beat until incorporated with a fork.

  4. Heat an 7"-8" omelette pan. Melt a tsp of margarine in the pan and swirl around til coated.

  5. Pour in half the mixture. Swirl around the pan quickly, and begin to shake the pan gathering the omelette to the edge, and then slip onto a shallow bakeproof dish.

  6. Make second omelette and place beside other on dish.

  7. Heat a griller to high. Slit the omelettes lengthways leaving closed at the ends. Spoon the tomato mix into the slits. Spread either ricotta or pour light cream over the omelettes. Sprinkle on cheese and brown under the griller til bubbly.

  8. Serve and enjoy.

  9. (You can make the omelettes beforehand, and finish under the grill before serving. If you make a few omelettes this dish is suitable to serve to several guests in the bakeproof dish at the table.)
