Recipe Ingredients for gratin of fresh greens

8 cups chopped greens
1 1/2 cups skim milk
1 ounce bacon
1 teaspoon olive oil
2 cloves garlic
1 cup onions
1 slice whole wheat bread (toasted and made into crumbs)
1/2 ounce grated parmesan cheese

Recipe Directions for gratin of fresh greens

  1. Clean and dice fresh greens. Any assortment is fine: Kale(both green and purple), chard, collards, callaloo, etc.

  2. Blanch greens in large pot of salted water until tender. (approximately 8-10 minutes)

  3. Drain cooked greens and set aside.

  4. Add olive oil and pancetta to pan that the greens were cooked in. Render the fat from the pancetta (about 6 minutes) and add onions and garlic and saute till tender.

  5. Add milk and reduce until slightly thickened.

  6. Add greens to pan and mix thoroughly.

  7. Put mixture of greens and sauce in a shallow casserole and top with bread crumbs mixed with grated parmesan cheese.

  8. Bake for about 15 minutes at 350 degrees or until topping is browned.
