Recipe Ingredients for Gran's World Famous Paper-thin Crepes

3 large eggs
2 cups skim milk
1 cup flour
3 tablespoons sugar
1 pinch salt

Recipe Directions for Gran's World Famous Paper-thin Crepes

  1. Heat well-oiled skillet until very hot.

  2. Remove from heat, and bring stove-top to medium setting.

  3. Pour a serving-ladle's worth of batter into the heated pan, swirling it to coat the bottom in a thin film.

  4. Work edges down with spatula, and flip over after approx. 20 seconds, or when underside is golden brown.

  5. Leave on alternate side for another 20 seconds.

  6. Repeat until batter is gone, taking care to re-oil the pan as needed.

  7. Makes approx. 15 crepes. Sugar can be substituted with Splenda, and try 1/2 cup flour and 1/2 vanilla whey protein powder as a nice low cal high protein alternative.

  8. Fillings can be hot or cold, salty or sweet. Get creative!
