Makes 14 servings



A healthy granola containing no processed sugars but with more dried fruit than usually found. 1/3 cup on 1 cup of plain yogurt makes a satisfying breakfast.

Recipe Ingredients for Granola

3 cups rolled oats
1/2 cup chopped walnuts
2 teaspoons cinnamon
1/3 cup apple juice
2 tablespoons honey
2 tablespoons butter
1 teaspoon vanilla
1/3 cup dried apricots (6 total)
1/3 cup dried cranberries
1/3 cup prunes, chopped
1/3 cup raisins (golden preferred)

Recipe Directions for Granola

  1. Preheat overn 325 F.

  2. Combine oats, walnuts, and cinnamon in a large bowl and set aside.

  3. Combine juice, honey, and butter in small saucepan. Heat over medium heat only until honey is dissolved. Add Vanilla and mix well.

  4. Drizzle honey mixture over oats and mix well.

  5. Line large baking pan with parchment paper. Spread oat mixture evenly and bake for 10 minutes. Stir and bake an additional 10 minutes. Oats should be golden so it may be necessary to bake 5-10 minutes more.

  6. Remove from pan and stir in dried fruits. Cool completely. Store in airtight container in refrigerator. Makes about 4 2/3 cups or 14 - 1/3 cup servings.
