Slight adaptation from Bittman's How to Cook Everything.

Recipe Ingredients for Granola

6 cups rolled oats
2 cups slivered almonds
1 tsp cinnamon
1/8 tsp salt
1/2 cup honey
1 cup dried cherries, unsweetened

Recipe Directions for Granola

  1. Preheat the oven to 300 F.

  2. Toast the oats, stirring frequently, in a 9" x 13" pan over medium low heat 3-5 minutes until they become fragrant and start to change color.

  3. Add the almonds and continue toasting and stirring 4-5 minutes.

  4. Add the cinnamon, salt, and honey. Stir to combine. Place in oven.

  5. Bake 20 minutes, stirring once or twice during that period.

  6. Cool on a rack, stirring every 10 minutes until the granola reaches room temperature. Store in an airtight container.
