Fast and kid-friendly energy snack. High protein and fiber packed into a small bar.

Recipe Ingredients for Granola Energy Bars

1/4 c flax seeds
1/4 c slivered almonds
1/4 c wheat germ
1/2 c dried cranberries
2 c oats
2 c crispy rice cereal
1/2 c crunchy peanut butter
1/2 c brown sugar
1/2 c light corn syrup
1 t vanilla

Recipe Directions for Granola Energy Bars

  1. Lightly grease an 8x8 pan.

  2. In a large bowl, mix the first six ingredients.

  3. In a smaller bowl, mix the peanut butter, sugar, and corn syrup. Microwave on high for 2 minutes. Add the vanilla and mix well.

  4. Add the peanut butter mixture to the dry ingredients. Stir with a wooden spoon to coat well.

  5. Transfer to the pan, and use plastic wrap to press firmly everywhere. Stand for 1 hour at room temperature before cutting into 16 bars.
