These cookies are a great new take on the traditional oatmeal cookie. For a more complex flavor, try different flavors of granola. Apple Cinnamon is a great one to try. 1/2 cup of chopped dried apricots and/or 1/4 cup hulled sunflower seeds or chopped nuts can also be mixed in during Step 6. Enjoy!

Recipe Ingredients for Granola Cookies

6 tbsp Butter or Margarine
3/4 cup Light Brown Sugar
1 Egg
1 tsp Vanilla Extract
1/2 cup Whole Wheat Flour
2 tbsp Whole Wheat Flour
1/2 cup Unbleached White Flour
1/2 tsp Baking Soda
1 cup Granola Cereal

Recipe Directions for Granola Cookies

  1. Combine butter, brown sugar, egg, and vanilla extract in a mixing bowl.

  2. Mix well.

  3. Combine both flours and baking soda in a separate mixing bowl.

  4. Add flour mixture to the butter mixture.

  5. Mix well.

  6. Stir in granola.

  7. Drop rounded teaspoons on a greased cookie sheet.

  8. Bake at 300 degrees for 15 minutes.
