Directions 1. Preheat oven to 350 2. In medium bowl, whisk egg, maple syrup & oil 3. Stir in oats, pumpkin seeds, cranberries (or raisins) and sesame seeds 4. Generously coat a 12 cup muffin-pan w/ oil 5. Divide mixture into 12 portions, about 1 heaping tbsp. each 6. Press batter into muffin-pan, with back of spoon 7. Bake in middle of oven until golden around edges (10-12 mins.) 8. Upon removal from oven, use knife to go around edges so it won?t stick 9. Once cool, remove using spoon 10.
