My version of kashi granola bars.

Recipe Ingredients for Granola bars

8 ounces rolled oats
1/4 cup sesame seeds
1/4 cup flax seeds
3 ounces almonds
1 1/2 ounces wheat germ
6 ounces honey
1 3/4 ounces dark brown sugar
1 ounce unsalted butter
2 teaspoons vanilla extract
1/2 teaspoon kosher salt
6 1/2 ounces dried cranberries

Recipe Directions for Granola bars

  1. Preheat oven to 350F.

  2. Spray 2 12-muffin muffin pans with cooking spray OR cut recipe in half and use one pan.

  3. Spread the oats, seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.

  4. In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.

  5. Once the oat mixture is done, remove it from the oven and reduce the heat to 300F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Put mixture into muffin tins, filling each one about halfway. Press down firmly. Bake for 25 minutes. Remove from oven and allow to cool completely. Store in an airtight container for up to a week.
