This recipe makes closer to 30 bars than 15, but I squish this into half a pan so they come out big and chewy and dense.

Recipe Ingredients for Granola Bars

2 cups rolled oats
1/4 cup splenda brown sugar blend
1/2 cup wheat germ
1 tsp cinnamon
1 cup whole wheat flour
1/2 cup shredded coconut
1/2 cup currants
3/4 tsp salt
1/2 cup honey
1 egg
1/2 cup vegetable oil
2 tsp vanilla extract

Recipe Directions for Granola Bars

  1. Preheat oven to 350.

  2. Generously grease a 9x13 pan.

  3. In large bowl, mix together oats, brown sugar, wheat germ, cinnamon, flour, coconut, currants, and salt.

  4. Make a well in middle and pour in honey, oil, egg, and vanilla.

  5. Mix well.

  6. Pat evenly into prepared pan.

  7. Bake 15-25 minutes, until bars begin to turn golden brown at edges.

  8. Cool for 5 minutes, cut into bars while still warm.
