I used the Rogers Cranberry-Almond Granola cereal and used applesauce rather than oil. I could not add the proper granola in and so the calorie content may be lower than this recipe states.

Recipe Ingredients for Granola-apple muffins

1 cup whole wheat flour
1/2 cup all purpose flour
2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1 egg
3/4 cup 1% milk
2 tsp lemon juice
1/2 cup apple sauce, unsweetened
1/3 cup brown sugar
2 small apples, peeled and grated
1 1/2 cup Granola cereal, 5 grain cranberry almond

Recipe Directions for Granola-apple muffins

  1. Pre-heat oven to 350

  2. Line muffin tin with muffin liners

  3. Sift flour, baking powder, baking soda, cinnamon, nutmeg and salt - set aside.

  4. Mix together milk and lemon juice (this is in place of butter milk)

  5. Beat together milk/lemon juice, egg, apple sauce and brown sugar.

  6. Stir in grated apple

  7. Stir in dry ingredients

  8. Stir in Granola

  9. Spoon batter into prepared muffin tin

  10. Bake at 350 for 20 - 25 minutes. Use tooth pick test to ensure baking is done.

  11. Enjoy!
