Recipe Ingredients for Granny's raisin and apple bread pudding

171 grams (Thomas Nooks n' Crannies English Muffins- 3)
28 grams raisins (1 box)
132 g (1 1/2 small Granny Smith Apples
3/4 cup brown sugar
1 1/4 cups Evaporated skim milk
1 tablespoon Evaporated skim milk
3 tablespoons (Smart Balance Margarine)
3/4 teaspoons cinnamon, ground
1/4 teaspoon vanilla extract
3/8 ounces Egg Substitute

Recipe Directions for Granny's raisin and apple bread pudding

  1. Preheat oven to 350 degrees F. Spray a 1 1/2 quart pyrex bowl.

  2. In a large bowl, combine english muffins, raisins, and apples. In a small saucepan, over medium heat combine brown sugar, milk and margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.

  3. In a small bowl, whisk together cinnamon, vanilla, and egg substitute and pour over bread mixture in bowl. Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
