Granny Valle's Cornbread - unsullied except for the sugar Mom and then I added through the years.

Recipe Ingredients for Granny Valle's Cornbread

1 c flour
3/4 c cornmeal
1 tsp salt
3 tsp baking powder
1/3 c sugar
2 eggs
1 c whole milk
1/4 c vegetable oil

Recipe Directions for Granny Valle's Cornbread

  1. Coat the bottom and sides of an iron skillet (medium size, no more than 8-10" diameter) with the oil. Let soak while you get the rest of the ingredients together.

  2. Add the remaining ingredients and then pour in the excess oil. If you want to omit the sugar, you can. Mom put in 1/4 cup and I put in 1/3-1/2 cup depending on my mood. :-)

  3. Stir till well blended.

  4. Pour the mixture into the iron skillet and bake at 375-400 degrees F for 20-30 minutes until golden brown on top and a knife inserted in the center comes out clean. If it's brown but still needs some cooking time, lower the temp and add 5-15 minutes (in 5 min increments) until it's done.

  5. Take it out and give it some time to cool, about 15-20 minutes - but don't let it cool all the way. This family heirloom is best served hot and slathered with (lowfat of course) butter! :-)
