Recipe Ingredients for Granny Minnie's Banana Nut Muffins

2 eggs, large
1/2 cup granulated sugar
1/4 cup dark brown sugar
1/2 cup butter, melted (cooled to warm)
3 large bananas, ripe to within a day of rotten
1 tablespoon water
1 cup all-purpose flour (unbleached)
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup pecans, roughly chopped

Recipe Directions for Granny Minnie's Banana Nut Muffins

  1. Pre-heat oven to 350 degrees

  2. Melt butter and set aside to cool

  3. Toast pecans lightly and set aside to cool

  4. Beat eggs well (30 sec. on high)

  5. Add sugar to eggs; beat until fluffy

  6. Add butter to mixture; beat until fluffy

  7. Mash bananas with water; stir into mixture

  8. Sift dry ingredients together and stir into mixture until barely mixed

  9. Add pecans and stir until incorporated

  10. Pour batter into muffin tin, lined with cupcake liners or greased and floured

  11. Place on lower rack of oven, turning 180 degrees half-way through 15 minutes. Bake anther 10 minutes or until toothpick comes out clean.

  12. Cool in pans on rack for ~10 minutes; remove from pans and cool completely before storing in air-tight container. Will keep for 3 - 5 days.
